A good bread recipe is like a pair of jeans...
...everyone has a recipe that fits them just right but that doesn't fit everyone.
Here's mine!
Joy and Kristyn have asked for this one for some time so I'm finally posting it. My absolute favorite! Uses all things food storage, and its delish! I have tried on several recipes so when I found one that my kids love, I was sold! Good luck!
1/2 cup potato pearls (or flakes)
1 cup hot water
2 1/4 cup very warm water (120' F to 130' F)
1/2 cup brown sugar or honey
1/3 cup oil
6 cups flour approx. ( 3 wheat+3 bread flour or 4 wheat+2 flour, you choose the combo)
4 tsp instant dry yeast
1 TBSP salt
vital wheat gluten, follow the box
Directions
Mix the first two ingredients in a large bowl and let stand about 5 min or until reconstituted. Add remaining water, sugar, oil, yeast, wheat gluten and about 3 cups of flour. Mix and add salt. Knead by hand about 10 minutes until your no longer mad at "fill in the blank". (You know; made with love!) Then cover and let rise in a warm place 40 to 60 minutes or until you have had enough time to catch up on your blogging.
Punch dough down with one last curse word of forgiveness and divide in half. Form and put into two greased loaf pans. Cover and let rise in a warm place 35 t0 50 minutes or until you realize that your kids are getting hungry and waiting longer could be disastrous!
Position oven rack so that the tops of the pans will be in the center of the oven. Bake at 350' for 35 min.
Sometimes I roll the dough out and put sugar and cinnamon in it so it rolls up into Cinnamon Bread.

Dad and I and Peggy met Vic and MollyRuss and Nancy and Taylor and Emily at Lucy's grave site Fri. It was May 22. It was somber in the fact that no one wanted this experience but that we love her and know that Heavenly Father is in charge. This has been a deeply spiritual and experience and deeply hard.
As we stood there and held the pink balloons Nancy brought, we talked of memories. The wind was really whipping around us and drops of rain here and there. We finished talking and let the balloons fly. Concurantly, the wind stopped! Is was peaceful and even saw a little sun out. Some may discount this as coincidence. The more I think about this and recall other people with similar experiences,-passing of a loved one and the weather being present, I do believe Lucy knew we were there and was try to tell us. I wanted you to know I recognize the Lords hand in all things and the comfort he can give.
I love you all and hope you have a great week. Love Mom

Happy Birthday!
Can’t' help myself, I have to join in on this one!The reason for that? Look at #1:
1. I was so glad to finally have an older brother when I went lo live in Utah, and you proved very worthy of the task!
2. For talking to my exchange friend Elena till 3 in the morning about forgiveness , powerful stuff!
3. For making me feel better about my sucky love live, since, as you said: Jacksons suck at love (fortunately not true anymore)
4. For being a very good sport in Amsterdam, and going along with me showing you Amsterdam outside the tourist guides
5. For the amazing presence you have
Happy birthday Vic!
Love, Mirjam

Happy Birthday Vic,
Five (5) Reasons I love you.
(Also in no particular order.)
1) You were a happy child with a big smile.
2) You wanted to become a 'Land Banker' when you grew up, and even though you did not become a 'Land Banker', it was the 'thought' that you wanted to be like me - that motivated me to be a better Dad.
3) You wanted to be like the prophets which was even better and you became a better man than I.
4) You are a loving husband and father.
5) You are respected by all who know you.
I Love you Vic.
Love, Dad

1.You could babysit at an early age and I needed your help cause Dad was doing Church things and was gone allot.
2. You are the 1st of our family and have set a good example.
3. You came spiritually "in tune". You went to education week at 12- and understood it.
4. Lucy and Molly and Peter are in our circle of family because of you.
5. You try lots of things and are successful at it too. (Remember when you rode you bike backwards?)
I just love you so much. Mom

Happy Birthday Brother!
5 reasons I'm glad Vic is my brother:
1 - because I can say "Hey Brother!" to him and he gets the 'Arrested Development' reference.
2 - He's very wise, and knows all the good advice to give me.
3 - Even though he may be having a hard day, he still cares how I am doing, and how my day is.
4 - He takes the gospel seriously, and it makes me want to be a better person.
5 - He's a great older brother... and a great example.

Happy Birthday Vic!
Mom Said!
OK, Mom wants us to post 5 reasons we are glad you are our brother. I'm going early so no one takes my awesome reasons.
#1 Molly
#2 Lucy
#3 Peter
#4 Being the oldest, you always 'tested' life first, and you showed us that we could survive our fears. Fears like Dad, '5150', getting caught driving underage (oh wait-you INSTILLED that fear) and the fear of losing someone we love. You have shown us what it means to be strong in the face of fear and get past it or work through it! There weren't very many things that we had to deal with that you hadn't all ready gone through. But you also showed us the consequences-like jumping off 5150 when the bottom had shifted and was more shallow and that fears were survivable. I am so glad you are my older brother and have paved the way for us timid souls who may not have tried things if it weren't for you.
#5 Being Vic Jackson's sister has always had perks! And I just love you.
